Mixed Veggies

Grillt Veggies

I’ve been craving roasted mixed veggies for a few days now. This conglomeration includes asparagus, broccoli, garlic, red and green bell peppers, red onion, sweet potatoes, yellow squash and zucchini. Oh, and mushrooms.

Serve that up with a couple of thinly sliced ribeyes and some garlic sauteed mushrooms — followed later by strawberry shortcake for dessert — and you’ve got yourself a meal.

(For the record, my next mixture will include asparagus, garlic, red onion, sweet potatoes and squash. I can do without the other veggies, in this dish, anyway.)
